The Rice Porridge at KAYU-SAN-CHIN carries on the philosophy of “food as medicine,” inherited from SHA HO DEN, an authentic Chinese restaurant founded in 1967.
In China, under this philosophy, warming the body from within is considered essential to good health. Every morning, we slowly cook raw rice in our freshly prepared house-made broth, enhanced with ginger, to create a rich, nourishing, and flavorful Rice Porridge. This wholesome dish gently warms the body from the inside, offering comfort and vitality with every bowl.
Unlike Japanese okayu (Rice Porridge), Chinese Rice Porridge is made by simmering rinsed rice in boiling broth until the grains bloom and split open. This long, slow cooking process infuses the rice with the rich flavors of the broth, giving it a deep, savory taste.
Every morning, we slowly simmer our porridge right in the restaurant, using dried scallops for extra depth of flavor, kombu (kelp), chicken broth, and fresh ginger to gently warm the body from within.
At KAYU-SAN-CHIN, our Rice Porridge is prepared with a signature "golden ratio" blend of 2 parts white rice to 1 part brown rice . Compared with white Rice Porridge, brown Rice Porridge contains 7 times more vitamin B1 and 6 times more dietary fiber, making it both nutrient-rich and low in calories.
Our special sauce blends the rich flavors of oyster, bonito, and kelp from the sea. The rich ginger flavor enhances the savory Rice Porridge at KAYU-SAN-CHIN, providing the perfect hidden accent.
Perfectly balancing tangy and spicy flavors! Our signature sanramen (hot and sour noodles made with whole wheat noodles) has been a favorite since the restaurant first opened. We also serve a variety of noodle dishes, including our popular Shrimp Wonton Noodles, featuring a light, savory broth and the delicate texture of wontons.
